Abstract

Culinary tourism can raise the value of local products and strengthen destination identity, yet many traditional foods in Indonesia remain household businesses that are not integrated into tourism. This study examines Nasi Puyung, a spicy rice dish originating in Puyung Village, Central Lombok, to identify its condition and potential, the factors that shape its development, and strategies for its downstream development as community-based culinary tourism. A qualitative-descriptive design was applied using desk research on verifiable secondary data: Statistics Indonesia village statistics, scholarly articles, online media and OpenStreetMap. The data were examined through content analysis, value chain mapping and a SWOT–TOWS matrix. Puyung Village covers 7.14 km² and has 14,295 residents, 67.18% of whom are of working age, and lies about 8.8 km from Lombok International Airport on the corridor to the Mandalika Special Economic Zone. Nasi Puyung has a history dating from the 1970s and a distinctive identity, and it has already spread to at least eight outlets in Central Lombok and Mataram priced at IDR 15,000–50,000. However, its digital visibility is low, and the free use of the “Puyung” name by businesses outside the village risks moving value away from its place of origin. The proposed strategy rests on four pillars: product standardisation and legal protection through communal intellectual property; a storytelling-based culinary trail; community institutions such as an association, Pokdarwis and BUMDes; and digital marketing integrated with the airport–Mandalika corridor. These steps support SDG targets 8.3, 8.9 and 11.4, and field validation is recommended.
